Sweetheart Caramels a Treat for Those You Love

?Yes, it?s true that Outdoor Families Magazine created a ?Nourish? section with every intention of publishing healthy recipes for the entire family in this era of processed, color-coded food. However, when writer Jessica Averett sent over a recipe for homemade caramels with a sticky-sweet goodness that reminded us of childhood holidays, we melted. Literally.

With Valentine?s Day upon us, sometimes a little treat is all it takes to bring some sunshine to those you love. Whether making goodies for a party or surprising the kids after school, try these microwaveable caramels. They?re easy, delicious, and will have you out of the kitchen and back on the trails, waterways, or slopes in no time.

15-Minute Sweetheart Caramels

  • Difficulty: easy
  • Print

INGREDIENTS:

  • 1 cup butter
  • 1 cup sugar
  • 1 cup corn syrup
  • 1 can sweetened condensed milk
  • 1 cup brown sugar
  • Large microwave safe glass bowl (at least 10-cup capacity)
  • Wax paper

DIRECTIONS: Melt butter in a large glass bowl. Add all ingredients except milk and stir well. Add milk and stir well. Microwave on high power for 13 minutes. ?To prevent spills, put a plate under your bowl in case it starts to boil over. Remove from the microwave and stir again. Pour hot caramel into a buttered 9?13 pan (similar in size and shape to a jelly roll pan) and allow to cool. Cut into 1?x 1? squares and wrap in wax paper. Store in airtight container.

NOTE: We found that once hardened in the pan, these caramels were difficult to cut. A pizza cutter or very sharp knife, dipped in a bowl of hot water, made things a bit easier.
